I am always on the hunt for better snacks for my family.  Healthy-ish I call them.

I have one kiddo who doesn’t care for fruit, but she is old enough now that if I told her to eat it, she will.  My youngest, on the other hand, has taken me through the ringer. I constantly worried about him getting his nutritional needs.  Once he turned two, a lot of the foods he ate were no longer ok. This was not about the matter of being stubborn, it was more of a texture thing.  So we have been working our way around it. For example, I buy the kind of pasta that has a serving of veggies in it. I still put foods in front of him to try, just not an overwhelming amount.  A couple of pieces at a time and we patiently wait for him to try on his own.  It works! He is slowly coming around. We have Chicken and peas back on the menu! I know there are so many other mommas in this same season. It will get better and don’t stress about it.  When we stress, our kids do too. 

A couple of years ago we made a little snack/treat that we call energy bites.  But I call them Bites of awesomeness! Only a handful of ingredients and just a few minutes to get it all together. They are packed with nutrients and fill our tummies.  One of the main ingredients is ground flax seed.  This is the one we use:

There are so many different recipes for these bad boys out there in web land, but here is how we do it:

Energy Bites

Prep Time 10 minutes
Servings 3 per person



  • ½ C Flax Seed Finely Ground
  • 1 C Oats
  • C Organic Honey
  • ½ C All Natural Peanut Butter or any nut butter of choice
  • ½ C Mini Chocolate Chips use any extra special yum you want ex; raisins



  1. Mix Oats and Flax seed together

  2. Stir in peanut butter and honey until evenly distributed
  3. Add your extra- in my case mini chocolate chips
  4. Cover and refrigerate overnight or for at least 2 hours-mixture should be firm
  5. Then make into little balls
  6. Serving is 2-3 balls
  7. Store in fridge
  8. Enjoy!
